Swiggy and Zomato are how new customers find you: huge audiences, delivery fleets, and a listing that costs nothing up front. For discovery and reach they remain very hard to beat.
The cost is structural. Aggregators charge a commission on every order (they don't publish a single public rate card; restaurants widely report percentages in the high teens to twenties plus GST and optional ads), control the customer relationship — you get an order number, not a phone number — and push discounts that come out of your side. Repeat customers who already know your name still route through the app.
